Вовлечение вторичных сырьевых ресурсов в кормопроизводство: использование барды и биомассы Aspergillus oryzae
Abstract
Введение: Актуальность исследования обусловлена необходимостью вовлечения вторичных ресурсов биотехнологических производств в кормопроизводство для снижения образования отходов и повышения ресурсной устойчивости предприятий.
Цель работы: экспериментально оценить влияние экструзии на технологические параметры процесса и свойства экструдатов при введении вторичных ресурсов биотехнологических производств в кормовые продукты.
Результаты: Объектами исследований являлись процессы экструзии и экструдаты с добавлением послеспиртовой барды и биомассы мицелиального гриба Aspergillus oryzae. В модельную смесь вводили 15–45 % барды или 15–30 % биомассы и оценивали изменение момента сдвиговых деформаций, давления и удельного расхода механической энергии, а также качество экструдатов (белок, коэффициент расширения, твердость, пористость, растворимость и влагоудерживающую способность). Увеличение доли вторичных ресурсов приводило к «смягчению» режимов, например, при внесении барды давление снижалось с 4,2 до 1,5 МПа, а энергозатраты — с 0,076 до 0,056 кВт·ч/кг, при росте белка с 16,4 до 24,7 г/СВ. Одновременно уменьшалась степень расширения и формировалась более плотная структура. При добавлении 45 % барды коэффициент расширения снижался с 7,6 до 1,6 при увеличении твердости с 5,5 до 10,8 Н. Увеличение доли добавок сопровождалось снижением растворимости гидратационных свойств гранул. Для получения пористых экструдатов целесообразны дозировки 15–20 % барды или 10–15 % биомассы; для плотных гранулированных форм — 30–45 % барды или до 30 % биомассы.
Заключение: Экструзию можно рассматривать как этап эффективной утилизации вторичного сырья в технологии кормов, полученные данные применимы для проектирования экструзионных процессов переработки барды и микробной биомассы в кормовые продукты.
